I love pumpkin, and I already made a roasted red pepper hummus, so I decided to try this Pumpkin Hummus. It was so simple to make, and was outstanding to eat. To prepare I measured out all of my ingredients.
Pumpkin Hummus
2 tablespoons lemon juice
2 tablespoons tahini
3 cloves garlic
3/4 teaspoon salt
2 (15 ounce) cans garbanzo beans, drained
2 teaspoons extra-virgin olive oil
1 (15 ounce) can pumpkin puree
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/4 cup pumpkin seed kernels
1 pinch paprika
Once they were all measured out, I had to grind up the pumpkin seeds. I used a coffee grinder for this. I also substituted garlic spice for fresh garlic since I did not have that one ingredient.
Then I mixed it all together in a blender (a food processor would be better), and put it in a dish. I paired it with Indian bread, Naan, which I got from Trader Joes. I also sprinkled paprika on top to add a nice garnish and extra taste.
My family loved this. We could not get enough of it. It is so healthy and so simple to make. Great for a Holiday snack!
