Chef Peter Sherman, who has formerly worked with Joel Robuchon, David Bouley and April Bloomfield, proves no one can get enough bacon with his new Hell’s Kitchen restaurant BarBacon.

After five years and endless bacon permutations, Sherman opened BarBacon late last year with an obvious bacon-centric menu, accompanied by beer and bourbon to enhance the affair, along with a U-shaped bar, brick walls, menus on butcher paper, and an open kitchen.

Sherman rotates a bacon tasting menu called The Tasting which includes two strips of five different bacon selections and features carefully selected bacon he searched around the country for, including Nueske’s from Wisco, Nodine’s pepper bacon, and Father’s Maple Bacon from an actual cabin somewhere in the heart of Kentucky.
At a press preview, Gothamist reps sampled the Nueske’s, Ozark Trails Brand Hickory Smoked Peppered Bacon, Father’s Country Maple Bacon and an astonishing Jalapeno Bacon that was spicy, smokey, and of course, addictive.

Sherman also offers a bacon grilled cheese stuffed with Nueske’s, plus fontina and gruyere cheeses between Amy’s Semolina with Golden Raisins and Fennel bread, all served with a side of roasted-tomato & eggplant soup.

Shani’s BLT is named after the chef’s wife, and is topped with avocado and a sunny-side-up egg.
They’re also serving burgers and pulled pork sandwiches, a bacon lobster roll topped with Nueske’s and chive, and they offer Vegan “bacon” in any of the dishes, as well as two types of turkey bacon.
