Charlie Francis, a British entrepreneur and founder of the ‘Lick Me I’m Delicious’ Ice cream company, has created the world’s first glow-in-the-dark Ice cream.

After reading a research paper on jellyfish and their fluorescent properties, Charlie convinced scientists in China to chemically recreate the glowing protein.
The ice cream reacts with the heat of the eater’s tongue which raises the pH level in the protein that makes it glow, so the more you lick, the brighter it becomes.
“It is probably the most expensive ice cream I have made because the jellyfish luminescence is four times more expensive than gold. So each scoop costs me around £140. It tastes pretty good though.”
In other words, one batch of the glowing ice cream means each scoop would cost about $225 for Charlie to break even.

Is it safe? “Well I tried some and I don’t seem to be glowing anywhere, so we’ll go with a yes for now,” Charlie writes on his blog.
“We’ve also made a non-jellyfish version using quinine from tonic to make a glow in the UV dark gin and tonic sorbet which is pretty neat, and can be ordered from all good Lick Me I’m Delicious event contraptions,” says Charlie.
