Homemade Lemon Bars Recipe

Lemon Bars are one of my all-time favorite desserts. What’s really interesting is how difficult it is to find a great lemon bar. Despite the simple ingredients of eggs, flour, sugar, butter, and lemon, the consistency differs. It is important for me to have a flavorful crust with soft, creamy texture of the filling. It’s also extremely important to balance the tartness and sweetness. I have been searching for a go-to place for this delectable dessert but alas, I have discovered that homemade is always better.

“Q’s Lemon Bar Recipe”

-Crust-

3 cups Flour

3/4 lb Butter, room temperature

3/4 cup Sugar

1/4 teaspoon Salt

-Filling-

7 Large Eggs, room temperature

3 cups Sugar

1 cup Lemon Juice

1 cup Flour

2 Tablespoons Lemon zest

Powdered Sugar

Method

1. For the crust, combine the butter and sugar in a mixer.

2. Add flour and salt to the mixture until it is all incorporated.

3. Spray non-stick spray into 9″ x 13″ baking pan and add the dough. Pack it down to form a crust. Cover and chill for at least 15 minutes.

4. Preheat the oven to 350°F.

5. Once the oven is pre-heated, bake the crust for 15-20 minutes.

6. While the crust is baking, combine all of the ingredients for the filling.

7. Allow the crust to cool slightly before adding the filling.

8. Bake the lemon bars at 350°F for 35-40 minutes. If you move the pan slightly, and the batter doesn’t jiggle too much, it’s done.

9. Allow the lemon bars to cool and refrigerate until completely chilled.

10. Slice the lemon bars into squares and serve with powdered sugar on top.

I was overly excited to satisfy my craving, so I tried one fresh out of the oven. It’s like a completely different dessert when served warm and still very tasty.
