Chef Paul Simon is New York Beer Company’s Executive Chef, where he’s responsible for supervising and leading the operations of the busy kitchen. As a boy growing up in Florida, he didn’t have much appreciation of the changing seasons. But after many years living in New York City, he has taken the different seasons into his advantage, creating irresistible and innovative dishes worthy of praise.
We asked Chef Simon for a recipe he thinks best reflects the spring season. He handed us his recipe Spring “Salad with Bacon-Cheddar Dressing.” Spring is all about light and citrus flavors, and this recipe is definitely that!
Spring Salad with Bacon-Cheddar Dressing
1-2 lbs assorted baby greens (mizuma, tat soi, red leaf, frisee, baby romaine, baby spinach etc.) washed and patted dry
1 pint cherry tomatoes halved
2 cucumbers peeled, seeded, and sliced
1 red onion thinly sliced and rinsed under cold water.
Dressing
1/2 c red wine vinegar
1 c good quality olive oil
1 T Dijon mustard
4-5 sprays each of bacon and cheddar Signature Flavor Sprays
salt, pepper to taste
Method
1. Whisk together dressing ingredients.
2. Toss greens with enough dressing to coat lightly.
3. Serve on chilled salad plates topped with tomatoes, cucumber, and red onion. Wonderful accompanied by grilled or roasted in season vegetables such as Portobello mushrooms, zucchini, fennel, red pepper and eggplant.
